Instructions:

Rinse the turkey properly and rub it dry. Mix 200 g of butter with salt and the herb mixture and rub the turkey with it. Heat the remaining butter and brown the minced meat and liver in it.

Add the parsley, potatoes, tomatoes, raisins, almonds, walnuts, olives and wine. Cover and simmer on low heat for an hour, stirring occasionally. Cool slightly and stuff the turkey with it.

Put the turkey on a roasting rack over the fat pan in the stove heated to 200 °C, pour the orange juice and clear soup over it and roast for half an hour. Then cover with aluminum foil, reduce the heat to 175 °C and continue roasting for about three to four hours, basting with the leaked liquid about every half hour.

Rest the turkey at 120 °C for about half an hour before cutting.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – these also have a fresh taste!
