You should use firm, semi-ripe papayas for this dish.
Scrape the flesh out of the papaya, leaving a peel about half an inch thick. Coarsely shred the pulp. Preheat the oven to 200 degrees. Dissolve the butter and brown the greens over moderate heat for about 2 minutes.
Then add the spices, brandy and vermouth and simmer for 5 minutes, stirring occasionally. Add the breadcrumbs to thicken the mixture and fill in the papaya shells. Bake in the oven for 1/2 hour.
