For the peanut coconut sauce, first peel and press garlic.

Chop the chilli. Heat oil in a pot and sweat garlic in it. Add chilli and peanuts and sweat briefly while stirring constantly, then deglaze with coconut milk. Stir in the peanut puree. Continue to simmer over medium heat for at least 5 minutes. Squeeze lime. Peel and chop the pineapple and fold in.

Season the peanut coconut sauce with salt and lime juice and serve.
