For the pear red cabbage, first remove the outer leaves from the red cabbage. Quarter the cabbage, remove the stalk and cut the quarters into fine strips. Coarsely crush the juniper berries and peppercorns.

Mix the red cabbage with pear vinegar, juniper and peppercorns, salt and walnut oil and leave to infuse for about 3 hours.

Finely dice the onion.

Melt the sugar in a wide saucepan until golden brown caramel. Add butter and sauté the onion cubes in it. Add the red cabbage, fill with pear nectar and cook in a covered saucepan for an hour over medium heat, stirring occasionally.

In the meantime, peel the pears, remove the core and coarsely grate the flesh. About 20 minutes before the end of the cooking time, mix the pear mixture into the red cabbage and let the vegetables simmer until the liquid is reduced.

Season the pear red cabbage with salt and pepper and serve.
