Dry the gutted and descaled fish well with a kitchen towel, season and fill the belly with some herbs. Turn it in the white bread crumbs – flour mixture on the other side, tap it and fry it in hot fat. Later roast in the oven at 200 °C on both sides for 15-20 min. Finally, add butter, fresh kitchen herbs and the juice of 1/2 lemon. Add salt if necessary and baste the fish a few times with the juice. Cut the young garlic bulbs in half. Roast them very slowly in olive oil, otherwise they will taste bitter. Cut the cooked potatoes in half, fry them briefly and season with salt. Serve with garlic and fish.

Our tip: If you like to cook with fresh herbs, it is best to get kitchen herbs in pots – so you always have everything ready!
