Make potatoes with the peel. Quench, peel, mash with a fork. Cool. Add almond kernels with sieved egg yolk, vanilla sugar, powdered sugar and almond flavoring. Knead everything well. Shape the potato dough into balls the size of walnuts. Roll them in pine nuts. You can also form small dumplings with 2 teaspoons and sprinkle with chopped almonds or possibly pistachios.
Leave to dry a little overnight.
