For the plum chutney, pit the plums and quarter them.

Crush peeled ginger, chili and garlic clove in a mortar. Cut the onion into rings.

Mix all the ingredients and leave to infuse for six hours. Then simmer on low heat for one hour, remove bay leaves and cinnamon bark and pour into jars.

Serve the plum chutney cold.
