Instructions:

1. dissolve the sugar to light brown caramel. Add the plums with 8 tbsp of cold water and make at low temperature with the lid closed for 5-10 minutes, but do not break up.

In the meantime, cut the bread into 16 slices. Mix the eggs with milk and vanilla sugar and pour into a shallow bowl. Pour the compote into a large enough bowl, place in iced water and cool until lukewarm.

3. Heat 20 g clarified butter in a large frying pan. Turn 1/3 of the bread slices several times in the egg milk to the other side and fry in the hot fat until golden brown. Remove the slices and keep warm. Cook the remaining bread slices in the same way. Serve with the compote. Serve with roasted almond ice cream.
