Instructions:

Boil milk and infuse the cinnamon stick in it for about 5 min, then put in the refrigerator. In a frying pan over a hot water bath, beat the egg yolks, eggs and sugar until the mixture is fluffy and smooth. Then stir the quantity cooled down. Whip the cream until stiff and fold into the mixture. Divide the parfait mixture in half and mix one part with poppy seeds, the other with the cold cinnamon milk. Line a loaf pan with plastic wrap and pour in the parfait mixture in two layers (poppy seeds first, then cinnamon). Then freeze in the freezer.

For the berry layer, whisk the berries with the sugar and rum.

Remove the parfait from the mold and cut into slices.

Place the berry layer in the middle of the plate. Place two slices of parfait on top and garnish with whole berries, lemon balm leaves and

elegant white wine
