Instructions:

For pork chops with black olives, first preheat oven to 100 °C.

Remove the fat from the pork chops and cut the edge a little. Salt and pepper the meat and coat it in flour. Heat about 3 tablespoons of olive oil in a pan and sear the chops on both sides for about 3 minutes. Pour half of the wine over them and let them sit for 2 minutes. Remove the chops and keep warm in the preheated oven.

Now finely dice onion and garlic clove, halve olives. Heat the remaining olive oil and sauté the bacon cubes with the olives, onion and garlic. Pour in the remaining white wine. Stir in the tomato cubes, add the bay leaf and season with salt and pepper. Simmer for about 5 minutes.

Arrange the chops, kept warm, on preheated plates, pour the finished olive-tomato sauce over them and serve the pork chops with black olives.
