Pork Chops with Herb Mushrooms on Polenta

Instructions:

Finely mortar the herbs together with the olive oil, rub the meat and mushrooms with it and leave to marinate for 1 hour.

For the gremolata, finely chop the parsley, garlic and nuts, mix with orange juice, orange zest and olive oil and season with salt and pepper.

Bring the vegetable soup to the boil with the oil, slowly pour in the cornmeal while stirring constantly, simmer over low heat for about 30 minutes, stirring frequently.

Just before serving, stir in the curd cheese, season well with salt and pepper.

Sear the pork and the herb mushrooms on all sides and let them cook in the oven at 160 °C for about 5 minutes.

Arrange the pork chops together with the cornmeal and mushrooms and garnish with the gremolata.
