Peel the mangoes and cut the thicker sides of each fruit as close as possible to the stone, then cut lengthwise into 1/2 cm thick wedges. Cut the remaining flesh from the stone and chop finely. Cut pepper in half lengthwise, remove seeds and finely dice.
