For the pork tenderloin in a robe, roll out the puff pastry to the thickness of the back of a knife and spread the slices of ham on top. Sear the pork tenderloin briefly on all sides in butter. Season with pepper, rosemary and salt. Remove from pan and let cool.

Heat butter, lightly fry parsley, add cleaned, sliced mushrooms, sauté in butter until soft, then spread on puff pastry or ham slices. Wrap the fillet in the pastry so that the seam comes to the bottom.

Place on a baking sheet lined with parchment paper, decorate with the pastry scraps and prick a few times with a fork.

Brush with beaten egg and bake the pork tenderloin in the sleeping skirt for about 25 minutes at 200°C in the preheated oven until golden brown.
