Prepare: For the dough, rinse the potatoes & cook in salted water for about 30 minutes. Yeast dough: Sift wheat flour into a wide bowl & press a hollow in the center. Crumble in yeast, add sugar and warm water. Gently mix the 3 ingredients with a little bit of the flour with a fork and let the dampfl rise at room temperature for about 15 minutes. Drain the potatoes, peel and press through a potato press while hot. Add the remaining ingredients and the warm potatoes to the dampfl and mix briefly with a mixer (dough hook) at the lowest speed. Prepare the dough on the highest speed for about 5 minutes until smooth. Let the dough rise in a warm place with the lid closed until it has visibly increased in size. In the meantime, preheat the oven at top & bottom heat. Cover the baking tray with parchment paper. Lightly dust the dough with flour, remove from the baking bowl & knead briefly on the surface. Form the dough into a round loaf, place on the baking sheet & rise repeatedly in a warm place until visibly enlarged. Score the surface of the dough decoratively (1 cm deep).

Baking: Brush the bread with water. Put the tray into the oven. Top/bottom heat: approx. 200 degrees (preheated) Hot air: approx. 180 degrees (not preheated) Gas: level 3-4 (not preheated) Baking time: approx. 40 min. During baking, sprinkle the bread occasionally with water.
