Instructions:

Whisk the cooked potatoes with the lukewarm water and syrup until smooth. Add the yeast, sourdough, flour and salt and mix well. Keep the very sticky dough warm and let it rise for one night. Work through again, adding flour, and carefully shape into a loaf. Rise again in a greased baking pan. Brush with black sugar water or coffee.

Bake at 200 to 220 °C for 60 to 70 min.
