For the potato casserole with sausages and apple compote, first peel and grate the onions and potatoes. Put them in a sieve to drain, collect the juice. After about half an hour, carefully pour off the juice so that only the starch remains at the bottom of the bowl. Mix starch with potatoes, onions, spices and eggs.

Cut bacon into finger-width strips and sausages into finger-width pieces.

Grease a casserole dish or roasting pan. Divide the bacon and potato-onion mixture into thirds, and the sausage mixture into halves. Layer as follows: Bacon, potato-onion mixture, sausage, bacon, potato-onion mixture, bacon, sausage and potato-onion mixture. Drizzle a little oil over the top.

Cover the casserole and bake at 180 °C for about 135 minutes. Remove the lid, sprinkle with cheese and bake for another 20 minutes.

In the meantime, prepare the compote. To do this, peel and core the apples and cut them into wedges or cubes. Put them in lemon water until all the apples are ready.

Heat butter and sugar in a pot. When sugar is caramelized, pour in apple juice and add cinnamon and apple pieces. Simmer until apples are soft but not falling apart.

Serve potato casserole with sausages and apple compote.
