Instructions:

Boil potatoes in their skins until soft. Peel and strain while still hot. Knead quickly with the remaining ingredients on a floured board. Form dough into a roll and let rest covered at room temperature for about 30 minutes.

Divide into appropriately sized pieces and shape into dumplings or noodles, depending on further use.

Simmer potato dough in salted water for about 10-15 minutes.
