Spread the potatoes evenly on a baking sheet lined with parchment paper and bake in a heated oven at 200 °C for about 5 minutes on each side.

Cut bananas into slices. Spread turkey slices and banana slices evenly on the pancakes, season with curry and sprinkle with flaked almonds. Bake in the heated oven at 200 °C for about 10 minutes.

Take out of the oven, put a blob of mango chutney on each pancake, sprinkle with parsley and serve garnished with cocktail cherries.
