Cut the poulard breast into strips, season with salt and place in the refrigerator to cool. In a blitz chopper with the egg and cold whipped cream until homogeneous. Season the farce with salt, pepper and nutmeg (freshly grated) and pass it through a sieve. Leave to cool until further use.
