For the Powidl Pofesen, cut the brioche bread into 8 slices, spread with Powidl, fold 2 slices at a time and press down well.

Pour milk into a deep dish and mix with vanilla sugar, cinnamon and a pinch of salt. Beat organic eggs in a second deep dish and whisk.

Chop the sliced almonds and put them in a third deep dish. Heat plenty of clarified butter. Dip brioche slices briefly in milk, then roll in eggs and finally in almond breadcrumbs.

Press breading down a bit and immediately bake in hot clarified butter until golden brown. Remove and drain on paper towels. Serve sprinkled with powdered sugar.
