Instructions:

Knead dough from sugar, yeast, flour and a little lukewarm water and let rise for 15 minutes. Add salt, remaining warm water and butter and rise repeatedly for 30 minutes. Shape into about 10 sticks and let rise again for 15 minutes.

In the meantime, cook the lye. Bring water with Na2CO3 and salt to boil. Soak the dough sticks in the lye for 1 minute.

Drain and place on a baking tray and sprinkle with coarse salt. Bake in a heated oven at 200 °C for 30 minutes.
