Rinse the plums well. Put them in a small bowl with the spices and sugar. Pour enough wine to cover the fruit and cook the plums at low temperature for about 30 minutes. Cool the stewed fruit in the bowl, then drain it well in a sieve (collecting the juice and using it for other purposes).

Remove the spices. Whip the whipped cream with the vanilla sugar until stiff.

Divide half of it evenly into four dessert bowls. Arrange 6 plums in a circle on top of each. Use a piping bag to pipe the remaining whipped cream in the center as a rosette on top.
