For the puff pastry rolls with strawberry cream, remove puff pastry from refrigerator 10 minutes before processing. Preheat oven to 210°C. Cut approx. 5 cm wide puff pastry strips from the wide side, roll onto greased roll forms (like foam rolls), brush with beaten egg and sprinkle with sesame seeds. Bake puff pastry rolls for about 10 minutes. Cool briefly, pull from rolls and fill when cool.

Save a few strawberries for garnish. Finely puree strawberries with powdered sugar. Outside of strawberry season, slightly warm frozen strawberries with powdered sugar to thaw and puree. Soak gelatin in cold water for about 10 minutes, warm slightly with Grand Manier or juice, mix with strawberry puree, gently fold in whipped cream and fill into puff pastry rolls.
