Cut pumpkin into pieces, soften in a saucepan barely covered with water, drain in a sieve.
Mix salt, eggs, sugar with an electric mixer until creamy. Add anise, orange peel and rum. Grind the cooked pumpkin or pass through a sieve, stir into the egg cream.
