Instructions:

For the pumpkin quiche, first prepare the shortcrust pastry. To do this, put all the ingredients in a bowl and knead until its uniform dough is formed. If necessary, wrap in plastic wrap and refrigerate.

For the filling, peel the pumpkin and onion and cut them into small pieces or cubes. Wash the young onion and cut into rings. Heat a pan with a little vegetable oil in it. Sauté the onion, bacon and pumpkin and finally add the young onion and stir briefly.

Put all the ingredients for the royal in a bowl, stir and season to taste.

Roll out the short pastry and place it on a baking paper in a springform pan. Mix the pumpkin vegetables and the royal together in a bowl, spread on the dough and then bake at 175 °C convection oven for about 35 minutes.

In the meantime, put honey, mustard, vinegar and oil in a bowl and mix thoroughly. Season to taste with salt and pepper. Wash and core the apple, then dice and soak in lemon water. Wash salad as well, marinate with dressing and decorate with the apple pieces and nuts.

Remove the pumpkin quiche from the oven, cut into pie pieces and arrange next to the salad.
