Pumpkin Seed Parfait with White Wine Foam

Instructions:

For the pumpkin seed parfait, beat the eggs with the sugar and vanilla sugar over steam until foamy. This takes at least 10 minutes with the mixer. Place the container in cold water and continue mixing until the mixture is cold again.

Whip the cream until almost stiff, add the powdered sugar and carefully stir into the egg mixture. Flavor the parfait mixture with grated pumpkin seeds, cinnamon and the coffee liqueur.

Pour into molds and freeze for at least 3 hours.

For the white wine foam, just before serving, whisk egg yolks with the sugar and white wine over steam until very creamy. The mixture should be warm.

To serve, dip the parfait molds briefly in hot water, turn the pumpkin seed parfait out of the mold and serve immediately with the warm white wine foam. Decorate the pumpkin seed parfait with white wine foam with the garnish.
