A great pasta dish for any occasion:

Place the salmon slices in a gratin dish and season with salt. Pour Madeira over them. Sprinkle with herbs and steam in the oven heated to 180 °C for about 20 minutes until soft.

Remove the fish and keep warm. Pour the fish stock into a saucepan and heat. Bind with flour butter, season carefully with salt and cayenne pepper. Finally, fold in whipped cream to taste.

Pour this Madeira sauce over the fish and serve with pasta or potatoes.
