For the leek quiche, render the bacon in a frying pan, then add the sliced leeks and sauté them together. At the end add some salt and the caraway seeds to the mixture.

Pour the finished dough into a greased quiche dish and spread the leek and bacon mixture on top. For the glaze, mix well the crème fraîche, the eggs and the whipped cream.

Season with salt and pepper and spread over the quiche. Sprinkle the grated cheese on top and bake everything in the oven at about 180 degrees top and bottom heat for about 20 to 30 minutes until the cheese is golden brown.
