For the quick pea puree, steam peas in a little salted water until done. When the peas are ready, strain with a little cooking water (1-2 tablespoons) and the milk with a blender.

Season with salt, pepper and a pinch of nutmeg. Serve the quick pea puree with a blob of sour cream.
