Peel and core the quinces. Place the fruit in a saucepan, heat slowly, stirring constantly, and simmer for about 10-15 minutes. Remove from heat, press the quince mixture through a sieve, collecting the juice. Briefly rinse the pot, pour the juice back in and bring to a boil. Then reduce the heat and let the juice boil down to half over moderate heat. Now mix in the sugar and stir vigorously to dissolve. Pour the hot juice into small bottles, seal tightly and store in a cool as well as dark place. If necessary, add cold water in a ratio of 1:3 and serve.
