To make the raspberry ring cake, sift the flour into a container and mix with the salt. Melt the butter and add the milk.

Dissolve the yeast with the sugar (1) in the lukewarm liquid and add to the flour. Knead everything into a smooth, supple dough. Let it rise for thirty minutes with the lid closed.

Add the sugar (2), eggs and lemon zest to the dough. The last step is to add the raspberries.

Pour the dough into a large buttered cake pan. Let rise in a warm place with the lid closed until the dough almost reaches the edge of the mold.

Bake the Gugelhopf in an oven heated to 180° Celsius on the second lowest rack for forty-five to fifty minutes. Remove and let cool. Turn out the raspberry ring cake onto a plate and dust with powdered sugar.
