Instructions:

1. defrost raspberries, soak gelatin in cold water.

2. spread a package of raspberries through a sieve, stir with sugar, juice of one lemon and raspberry brandy. Allow the gelatine to melt dripping wet at low temperature and stir in as well. Chill.

Whip the cream with the vanilla sugar until stiff. 4.

Set aside two tablespoons of raspberries. When the raspberry cream starts to gel, add the remaining raspberries at the beginning, then the whipped cream. Set aside to cool for another half hour. Just before serving, top with the remaining drained raspberries.

As a menu suggestion:

Entrée: asparagus leaf salad.

Main course: Plaice with bacon dip
