Ravgchoech… Raven used to be called the ground kohlrabi. This root vegetable from the cabbage family thrived quite well in the Saanenland, was very storable, so also available in winter.

Sauté onions in butter. Add kohlrabi and potatoes and steam. Extinguish with the soup. Add the bacon cubes and cook for thirty minutes until soft.

Mash kohlrabi and potatoes with a pestle. Season to taste with salt and freshly ground pepper. Dressing.

Foam the butter until lightly browned, spread evenly over the top.
