1. rinse and dry the fish inside and outside cooled. Stir through oil, juice of one lemon, a scant teaspoon of salt and enough pepper. Place the fish on a plate and rub the marinade inside and out. 2.

Preheat the broiler or the oven to 250 °C. Finely crush the fennel seeds with a mortar. Chop the parsley and mix with the fennel. Finely dice the bacon.

Place two fish with a quarter of the bacon cubes on a piece of foil and sprinkle 1/4 of the parsley mixture on top. Close the foil tightly. Place the packets on the broiler or oven rack for 20 minutes and place in the center of the oven. Put the packets on plates, open the foil and bring the fish in the foil to the table.
