Make the turkey breast in salted water, remove and cut into small cubes.

Clean the vegetables, cut them into small cubes and blanch them briefly.

Finely dice the cooked ham as well as the cooked egg white. Mix the ham, egg white and turkey meat well with the finely chopped herbs. Pour into a glass mold and press lightly until smooth.

Mix the aspic powder, as indicated on the package, into hot water, season with pepper and pour over the turkey-vegetable mixture. Set in the refrigerator for at least 4 hours. It is even better if you leave the mixture in the refrigerator all night.

For the marinade, stir through the mustard, oil, herb vinegar, white wine and chopped chives and season with iodized salt and ground pepper.

Before inverting, dip the glass dish in hot water until the aspic is easily released from the rim.

Clean and rinse the oak leaf lettuce and spread it out on a plate. Arrange the aspic with the mushrooms on top. Spread the marinade evenly over the lettuce.
