For the rhubarb jam, cut the peeled and washed rhubarb into small pieces. Grate and wash the currant. Squeeze the orange. Put everything in a large pot.

Mix with honey, vanilla sugar and preserving sugar and simmer until soft. Puree with a hand blender. Boil for 5 minutes and fill into jars while still hot.
