Instructions:

For ribbon noodles with mushroom-pepper sauce, first prepare the noodles.

For the pasta dough, mix all the ingredients for it. When kneading (5 minutes/knead hook, 5 minutes/hand) add water by the spoonful.

The dough should be soft, but not sticky. Form a ball, wrap in plastic wrap and let rest at room temperature for 1 hour.

Then roll out 1-2 mm thick and cut thin ribbon noodles. Boil the noodles in salted water for about 3 minutes.

For the mushroom-pepper sauce, slice the mushrooms, chop the onion, slice the garlic thinly and cut the peppers into strips.

Heat olive oil in a pan until very hot and fry the mushrooms until brown. Remove from pan and set aside.

Sauté the onions in the olive oil until translucent, add the garlic and pour in the Soy Cuisine. Add bell bell pepper and thyme and simmer for 10 minutes.

Stir in mushrooms and capers and season to taste. Arrange the ribbon noodles with mushroom-pepper sauce and serve.
