For the herbed ribs, peel, finely chop and press the garlic. Peel the shallots and grate finely. Finely weigh the anchovies. Mix garlic, shallots and anchovies well with oil, salt and pepper and herbs.

Place the meat on the baking rack, brush with a little spice mixture and roast in the oven at 200 °C for about 60 minutes, turning to the other side every 20 minutes and brushing repeatedly with the spice mixture.

Then cut between each rib and divide into portions.
