Instructions:

First cook the rice according to package instructions, drain and set aside.

Coarsely grate the potatoes and mix with the rice, eggs and green onion, season well with salt and pepper.

Heat 4 tablespoons of oil and a tablespoon of butter in a pan, form flat loaves (pancakes) and place in the pan. If the mixture is too soft, add a little potato starch.

Fry the pancakes on both sides until crispy (golden/brown), drain and serve immediately.
