For the rice-pineapple muffins, preheat the oven to 200°C degrees and line a muffin tray with paper cups. Chop the chili pepper very finely and mix it with flour, baking powder, salt and pepper in a bowl.

Beat the egg with the oil and buttermilk and stir in the rice. Then fold in the flour mixture and finally fold in the pineapple chunks. Pour the batter into the ramekins and bake the muffins for 20 to 25 minutes. The rice-pineapple muffins are best served lukewarm.
