Press the cooked potatoes through a grater. Grate the raw potatoes, put them in cotton cloth and squeeze.

Mix the rasps with the sour milk and let it stand for about 2 hours. Add salt, flour and the cooked potatoes, and finally the raw potatoes. Mix everything together, arrange into dumplings and put into the boiling salted water. Leave to infuse for about 20 minutes.
