Salt and pepper the ready-to-cook Reinanken and coat lightly with olive oil. Dip in flour, shake off the excess flour and stick a sprig of basil in each fish’s abdominal cavity. Sauté the Reinanken briefly on both sides in hot olive oil. Drain the oil, add some fresh butter to the pan and finish cooking the fish in the preheated oven at about 170 °C for about 15 minutes. (If you poke the back of the fish briefly with a thin metal needle and it gets hot, it is done). Meanwhile, baste the fish repeatedly with butter. Take out the Reinanken and arrange them drizzled with lemon juice. In the frying residue, let some fresh butter foam up, toss the parsley in it and pour it over the Faaker See Reinanken.
