For the roasted onion raita, peel the onion, halve it and cut it into fine strips. Fry in a hot pan with ghee, add cumin seeds and fry for 1 minute.

The onions should be dark. Mix with chili powder, turmeric powder and 20 ml water and mix with yogurt.

Season with salt, refrigerate and serve the fried onion raita well chilled.
