Instructions:

For the roasted pork chops with apricot-tomato salsa and gnocchi, first mix the yogurt with the garlic, finely chopped coriander and the remaining ingredients, rub the chops with it and let them marinate for about 30 minutes.

For the apricot-tomato salsa, seed the tomatoes and cut into small cubes, seed the apricots and cut into thin wedges, mix with the remaining ingredients and season with salt and pepper.

Sear the pork chops in a pan on all sides and let them brown in the oven at 140 °C for about 8 minutes.

While the meat is in the oven, fry the gnocchi in a pan with 5 tablespoons of olive oil on all sides until they are nice and golden and hot. Then dress with the rest of the ingredients.

Serve the roasted pork chops with apricot-tomato salsa and gnocchi immediately.
