Crush the garlic cloves and mix well with a little water and the salt. Cut the bacon into coarse pieces, rub well with the garlic mixture and pepper. Leave the bacon pieces to marinate for two days. Then put them in a casserole dish, not too tight, and fry them in the oven (preferably in a tiled stove) until the bacon is cooked through and through. Put in a cold place. Put the well cooled bacon pieces through the meat machine and mix with the fat residue from the casserole. Season if necessary. Then pour into a clay dish and store in a cool as well as dark place.
