Instructions:

For the rum granita, first boil the water with the sugar and simmer for about 5 minutes. Mix with lime juice, zest and rum and let steep for at least 1/2 hour.

Pour into a shallow container and place in the freezer. Stir about every 30 minutes to get the consistency typical of granita.

Pour the rum granita into pre-chilled glasses and serve ice cold.
