For the rye bread, mix all ingredients and knead with a food processor (or hand mixer) until smooth.

Let the dough rise in a warm place until it doubles in height, then knead again, dust well with flour and let it rise in a bread basket in a warm place until it doubles in height.

Heat the oven to 220 °C, put a bowl of water on the bottom of the oven and place the dough on a baking tray, immediately place in the hot oven and bake for about 35 minutes.
