For the saddle of rabbit in cranberry-ginger sauce salt and pepper the meat, wrap it with bacon and tie it.

Sear all over with juniper berries, rosemary and thyme and roast in the oven at 160° for 7 minutes. Lower the temperature to 80° and let it finish cooking for another 5 minutes.

Keep meat warm and heat the roast stock. Add cranberries and ginger, deglaze with stock, strain and season to taste.

Remove strings from meat, cut in half diagonally and serve with spaetzle and sauce. Serve the saddle of rabbit in cranberry-ginger sauce.
