Remove saddle of rabbit and cut into medallions. Using a wide kitchen knife, plate the medallions. Next, dust with flour, turn in egg yolk to the other side and coat with white bread crumbs. Bake crosswise in a frying pan with butter until done.

Peel the green asparagus and blanch in boiling salted water, remove and rinse in iced water. Clean and fry the mushrooms.

Make a salad dressing from the ingredients and add the chanterelles and chopped herbs.
