Heat plenty of salted water. Preheat oven to 250 degrees. Cut peppers in half, remove seeds and cut into pieces. Cut fennel bulb into quarters, remove stem and cut into pieces. Remove the skin from the onions and cut them into quarters. Blanch everything in boiling salted water for 2 to 3 minutes, drain and place in a baking dish.

Cut the melanzani into slices. Peel the tomatoes, cut them into quarters and remove the seeds. Put both in the gratin dish. Put the sausage slices on top.

Pour the cream over everything and sprinkle with sage. Mix both cheeses with the breadcrumbs and put them on the top of the gratin dish. Cook in the heated oven for 30 minutes.
